Broccoli and Goats Cheese Fritters

Ingredients
1/2 Cup of plain flour
1/2 Red onion, chopped
Broccoli bundle, finely chopped with stalks removed
50g Goat’s cheese
1 Garlic clove, crushed
2 Tablespoons of olive oil
1 Egg
Salt and pepper to taste – which, by the way, I have always thought as a strange way to say ‘make it as salty or peppery as you like’ because to me it reads as ‘salt and pepper to snack on while you’re cooking)

Method
Steam the chopped broccoli until soft and crush with a fork, mix in the goats cheese and put to one side.
In another bowl, whisk the egg and then add the broccoli, red onion, cheese and flour.
Heat the olive oil in a hot pan and then cook the fritters for about 3 mins on either side, or until golden on top.
Serve up and enjoy!
