Refined Sugar Free Brownies Recipe

Instead of caster sugar, I used unrefined coconut sugar to sweeten them. Still a treat but a great alternative to a more ‘mainstream brownie’ recipe. 

This recipe is gluten free and refined sugar free. It makes about 16 small ‘bite sized’ brownies or 8 large slices.

Refined Sugar Free Brownies Ingredients

100 grams of unrefined coconut sugar
115 grams of butter (organic is preferable) cows or goats
55 grams of cacao or cocoa powder
2 eggs
115 grams of gluten free plain flour
1/4 tea spoon of gluten free baking powder
pinch of salt
15 grams of chopped walnuts
20 grams of refined sugar free chocolate chips – I LOVE Pulsin’s 

Refined Sugar Free Brownies Method

Preheat the oven to 180 degrees Celsius
This is where the recipe could NOT be easier – literally chuck everything into a large bowl and mix
The trick here is to only mix until the ingredients are all blended and smooth. Over mixing can lead to a sponge cake texture. Which is fine if that’s what you’re into.
Line a baking pan or tray, the one I use for this recipe is 25 cm x 25 cm but a little bigger or smaller is fine, too.
Bake for 20 minutes exactly – this is the only time in baking history where you don’t want the knife to have batter on it when you poke it in the middle
Leave it to cool for about 15 minutes (if you can) before slicing up
Keep in the fridge
