Creamy Avocado, Kale and Spinach Dip

Ingredients – Serves 4
1/2 cup of kale
1 1/2 cup of spinach
juice of 1/2 lime
1 garlic clove
2 tablespoons of olive oil
1/2 small red onion
1 1/2 avocado, peeled and chopped
pinch of salt, to taste

Method
Starting with the kale and spinach, add all ingredients into a blender and process until a thick until there is a thick and creamy texture, if it feels too thick simply add a bit more oil, one teaspoon at a time.
If you don’t have a blender, smash the avocado with a fork or potato masher in a large bowl and finely chop up the kale, spinach, garlic and onions and mix with the avocado. Mix in the oil, salt and lime juice and stir until well combined.
