Roasted Golden Beetroot Carrot Side Dish Ingredients – Serves 4 

3 Carrots
3 Golden Beetroot
1 Red Onion
1 Tablespoon of Olive Oil
Salt

Roasted Golden Beetroot Carrot Side Dish – Method

Preheat the oven to 200 degrees Celsius.
Peel the beets and cut them into half moon shapes.
Slice the carrots into batons and thinly slice the onion.
Put all the chopped vegetables into a bowl and toss in olive oil.
Transfer onto a lined baking tray and sprinkle with a pinch of salt. Roast for about 25 mins.
