Warming Winter Sweet Potato Soup
This sweet potato soup is vegan, sugar free, gluten free and low fat.
Is there anything more comforting on a winter’s night than a warming soup? Often we turn to ingredients like chillies to add heat or warmth to a recipe, but did you know that chillies actually disperse heat in the body? What that means it that the warming sensation you enjoy (or not enjoy, if spicy dishes aren’t your thing) is temporary – that’s why you sweat when you eat a spicy meal!
Unlike chillies, ginger has a warming effect and is also believed to have antioxidant properties, which helps to fight free radicals in the body. Ginger is also a great ingredient for adding spice if you are avoiding nightshades.

Warming Winter Sweet Potato Soup – Ingredients
2 sweet potatoes
3 medium carrots
1 cup of chopped butternut squash
1 brown onion
1 thumb sized piece of ginger, peeled
3 cloves of garlic
3 tablespoons of olive oil
1/2 tea spoon of cinnamon
Warming Winter Sweet Potato Soup – Method
Preheat your oven to 200 degrees Celsius
Cut the sweet potatoes, carrots and butternut squash into chunks
Line them on a pan and drizzle with 1 tablespoon of olive oil and the cinnamon
Put them into the oven on the middle tray and leave to cook for 20 mins, or until the edges are crispy
Meanwhile, dice the garlic, onion and ginger
In a large pot, heat the remaining oil with a little water (to avoid the oil smoking) and add the garlic, onion and ginger
Once the onions are becoming translucent, add 1 and 1/2 litres of water
