Super Easy Black Bean Scramble

5 minutes to make and cheap as chips. I love this for quick lunches between clinics. Beans are a cheap superfood with great benefits to your hormone and heart health, they also count as one of your veggie portions for the day!

Ingredients

2 eggs

1/2 tin black beans, drained and cooked according to tin instructions

1 teaspoon chilli pepper or flakes

1/2 teaspoon of paprika

pinch of salt

1 clove of garlic, diced

1 small handful of coriander (omit if you don't like the flavour/have it in the house)

Olive oil

Any tomato source - I used 1/2 tin of tomatoes but you can use 2 fresh medium sized tomatoes or 1 tablespoon of tomato paste, just add in a splash of water

Method

Heat a medium pan with olive oil

Add the spices, herbs and garlic, leave for 1 minute

Add the tomatoes, beans and enough water so that the pan is just covered with water

Stir until the water has evaporated

Add the eggs and cook until scrambled - you can also turn this into an omelette if you prefer

Enjoy with salad and a side of chips or sweet potatoes
